It's summer. It's hot and ice cream is our dessert staple. We usually have an ice cream cone after dinner but sometimes, I like to switch things up like a couple nights ago when I surprised my family with ice cream sandwiches. Not just any ice cream sandwich though, white chocolate chip and raspberry cookie ice cream sandwiches! I had made the cookies earlier in the day and then I just sandwiched vanilla ice cream between two cookies. They were heavenly and I have been dreaming about having another one ever since.
White chocolate chip and raspberry cookies are very easy to make. Since it's berry season, I have plenty of berries in my fridge and I always have bags of chocolate chips on hand. I wanted to try something different from a regular chocolate chip cookie and my family loved it. I see these cookies as more summery and fresh.
WHITE CHOCOLATE CHIP & RASPBERRY COOKIES
- 1 stick butter, unsalted, softened
- 1/2 cup granulated white sugar
- 1/2 cup light brown sugar
- 1 tsp vanilla
- 2 large eggs
- 1 tsp baking soda
- 1 tsp salt
- 2 1/4 cups all-purpose flour
- 1-10oz pkg of white chocolate chips
- 1/2 cup, fresh raspberries, chopped
Preheat oven to 375 degrees.
In a large bowl, add butter, white sugar, brown sugar and vanilla. Mix together until creamy.
Add eggs. Mix until completely combined.
In a small bowl, mix together flour, baking soda and salt. Add this mixture to the large bowl. Mix until combined and dough forms.
Add white chocolate chips and chopped raspberries. Fold until evenly combined.
Spoon onto cookie sheets. Since these cookies are gong to be used for ice sandwiches, you want them to be big.
I make them so that only 6 fit per cookie sheet. Who wants to eat a mini ice cream sandwich? Not anyone in this family!!
Bake 11-13 minutes. Do not cook more than 13 minutes. You want them to stay soft and chewy.
Remove from oven and cool on wire rack. Store in air-tight container if you are making ahead of time. Oh and go ahead and sneak a cookie, I won't tell!!
To my cookies, I add Blue Bunny Premium Vanilla Bean Ice Cream. There are so many Blue Bunny ice cream flavors but I'm a Vanilla Bean girl at heart!
To assemble your sandwiches: Turn one cookie upside down and scoop about 2 tbsp of vanilla bean ice cream on top of cookie. Use another cookie, right side up, and place on top of ice cream. Slightly flatten with your hand. Serve right away!!
Cookie ice cream sandwiches at their finest. I guarantee your family will love this summery treat!!
