Waiting At The Crossroads

I am not a religious person so I had no idea who Ezra T. Benson was or where this quote came from. I heard it and fell in love with it because this is where I am right now, at a crossroads, in parenting. My kids are 11, 10 and 9 and it seems like overnight, they have grown into big kids. There are so many opinions, so many arguments and so many disagreements. I have my own opinions on how they should be raised intertwined with the very differing opinions of two other parents. Honestly, I feel like a glorified babysitter. I want to be there for my kids all the time. They expect me to be there all the time. I like to be expected to do this but it's hard with three kids going in three different directions. As overwhelming as it is, I love being a mother. 



I love being there when they are dismissed from school.

I love answering all the questions.

I love finding out the latest gossip about who did what.

I love knowing that they have someone there guiding them with homework.

I love seeing the happy smiles when they ace a test.

I love being there during the heartaches that come with developing friendships. 

I love shuttling them to all their extracurricular activities. 

I love being there when they nail the song they have been practicing.

I love being there when they shave a second off of their freestyle.

I love knowing that they feel secure because I am always around. 

I love being there. Just there. 

I have chosen to be a mother. I have chosen to be a step-mother. I have chosen all the insane amounts of worry that comes with these responsibilities.  I want to be able to do this until they are ready to go out on their own. I don't love the arguing and the headaches but it comes with parenting. I want to be able to do all of this again. I hope to one day be able to have more children. I am leaving it up to fate. 

I am at a crossroads and I am choosing to grow along with my children. I choose to be around as much as possible, even when they don't really want me to be around. They know I will always be there for them. They can count on me!

Workin' It Wednesday: 2017 Goals

I love fun posts and I love me a good link up. One of my favorite bloggers, Shay from Mix and Match Mama, posted up a new link-up today and I am thrilled to be joining in! This new monthly linkup is called Workin'It Wednesdays and it's all about how you are workin' it in life. This month's topic is 2017 goals and now that we are a few weeks into the new year, I have finally settled on my goals for 2017. Notice, I typed goals and not resolutions. I work better with the word goals.


Goal #1: Do more of what makes me happy!
This goal is very important to me. It has taken me a long time to realize that I need to be #1 before I can do anything for anyone else. I have decided to do more of what makes me happy. Like right now, I am not having dinner because I don't want dinner. I am sitting here, blogging, while my kids watch TV in the living room and I am munching on a plate of strawberries, chocolate and cheese. I am in heaven right now. I have spent my entire life working hard to make sure others are happy and I have neglected myself so yes, I will be a little selfish this year.

Goal #2: Grow my blog and YouTube Channel
I always make this a resolution and it doesn't work. I start the year strong and always slack by mid-March. This year is different. I have sat down and planned my growth. I have signed up for courses to learn all I can about blogging. I am asking other bloggers for advice and I am just sitting down to write. I am intentionally making time to blog. This blog provides my share of the income for my family's needs so it's important for it to grow so more opportunities come my way! We also have a family YouTube channel that has been seriously neglected. Once again, we were all gung-ho about it in the beginning and then the joy fizzled out. I do needs lots of help with filming and YouTube so that one will take time to conquer.

Goal #3: Get another car
We have been a one-car family for years. We did for financial and to be more green but the time has come for us to become a two car family. I might not get a brand new car but a brand new to us car is perfect. We need a car with a little more space and that's a little more reliable. Now, adding another car means taking on a car payment, which means at least another $400 a month to add to our budget so we need to really put thought into this goal.



Goal #4: Have a wedding
As many of you who follow me on social media know, I recently got engaged. I've been waiting a long time to get engaged and I am honestly enjoying my newly engaged status. Now, we do already have kids and have been together for 5 years but I don't care, I want a wedding. I don't want to just go down to the courthouse and sign some paperwork. I want an actual wedding with a dress and a a wedding party and a fun reception. It's always been a dream of mine to have a wedding and I will accomplish it this year, October 7, 2017 to be exact. I hope you guys are as excited as I am and please follow along with #TheCaleros2017!

I have a lot on my plate this year. I also would like to lose 10lbs (you know, for the wedding!) and spend more time with my family. I would also love to go on a family vacation but I'm not sure how feasible that is with getting a new car and paying for a wedding!

Skinny Lasagna

New year, new weight loss resolutions and new fitness goals. We've all been there and it's hard to keep up. Losing weight and getting fit takes effort and dedication. I'm terrible at both. I take it step by step, especially this year, I have a wedding to look amazing for. I've started with some walking and trying out skinnier versions of my favorite meals. I do not deprive myself of yummy foods. It doesn't work for me so I just come up with variations that still taste amazing, like this skinny lasagna. Skinny lasagna still has pasta, still has meat and still has cheese, just with some changes like ground turkey instead of ground beef, cottage cheese instead of ricotta cheese and 2% mozzarella instead of whole. I promise you it's delicious and your whole family will love it!


Skinny Lasagna is the perfect family-friendly skinny dinner! With ground turkey, cottage cheese and tomatoes, what's not to love?

Skinny Lasagna
Serves 12

Ingredients:
1 box cooked lasagna noodles
1 1/2 lbs lean ground turkey
1 can diced tomatoes
1 small yellow onion, chopped
4 cloves of garlic, chopped
1 tsp cumin
1 tsp oregano
1 16oz tub of cottage cheese
2 cups of 2% reduced fat shredded mozzarella cheese
fresh basil leaves
salt and pepper
1 tbsp olive oil
2 cups of red pasta sauce

Preheat oven to 375 degrees.

Cook lasagna noodles according to package directions. Meanwhile, in a pot, heat 1 tbsp of olive oil over high heat. Add ground turkey and cook until brown. Once browned, add onions, garlic, tomatoes, cumin, oregano and tomatoes. Mix well, cover, lower heat to medium and simmer for about 10 minutes. Remove from heat.


Lightly grease a 13 x 9 baking dish. Add red pasta sauce to the pan, covering the bottom, about 1 cup. Layer with lasagna noodles and then ground turkey mixture. Layer with noodles and then top with half the cottage cheese. 


Repeat the layering process. 


On your last layer of noodles, spread 1 cup of red pasta sauce, top with mozzarella cheese and basil leaves. Cover with aluminum foil and transfer to oven. 


Bake covered for 15 minutes and then uncover and bake for another 15 minutes. Once cheese is golden, remove from oven!


Let sit for about 15 minutes before cutting into the lasagna. It will be gooey and cheesy and amazing!!


This lasagna is a staple in our home (especially since Amberly and JC have both cut red meat out of their diets). Sometimes, I make two and freeze the second one. We love lasagna and this skinny lasagna is heaven-sent!!

2017 Family Friendly Movies

It's time for my favorite post of the year: my annual list of family-friendly movie releases! Every year, I take a couple hours and put together a list of all the family-friendly movies that will be coming out for the year (you can check out past lists here). This really is my favorite post because I truly love going to the movies with my family. There is no shortage of kid-friendly movies coming out in 2017!  I have 20 on the list! I think it's the most I have ever posted! This year we have everything from the return of Lightning McQueen to the much-anticipated live-action Beauty and the Beast and more minions. 2017 is jam-packed of kid-friendly movie fun!!

Father's Day is about a month away and it's time to get crafting!!! The dads in our family love handmade gifts from the kids, along with a nice lunch on Father's Day. They would never expect any of us to spend a lot of money on their gifts (even though we sometimes do) and they love to see that the children put time and effort into their gifts. Be Grateful for Homework

Children and homework. It's a daily struggle for most families. Yes, I agree, some schools give way too much homework but from a parent whose child did not receive homework this year, I just want to day, be grateful for homework!

I have many friends with children in other classrooms in the same grade as my son and they would totally disagree with me. I get it. Homework sucks! It takes hours to do and sometimes parents can't even help their children with the work. But, you know what homework does? It reinforces classroom teachings and helps parents study with their children. In my son's class, there isn't any homework other than computer based homework I am not allowed to help with. Do you know what this means? I have no idea what he is working on during the day. I receive a paper, once every two weeks, letting me know when he has a test or quiz but I do not have any material to study with. I have to go online and find worksheets to review with him. I have to go and find a tutor, pay hourly, to reinforce grade level work.  I am now struggling with a child that might fail third grade because he is below grade level. 

In my opinion, this could have probably been avoided if my child received at least some reading homework. Just a worksheet with one passage would have reinforced reading skills that he is lacking and would have helped me catch on that he had reading comprehension issues. That one sheet could have gotten my child to a tutor sooner and not five weeks before school ends. 

Teachers, from a struggling parent, give some homework. You are not doing anyone a favor by sending hours of homework and you are not doing anyone a favor by not sending any. We, the parents, have no idea what material you are reviewing in class otherwise. Help us help our children succeed in school!

Parents whose children get homework, be grateful. You have the opportunity to be involved in your child's education. Take that opportunity, sit with them and review.  Help them succeed in school. Let them know that you care about their education. I have two other kids that do receive homework and they love it when we sit together and do the work. They like to be able to come and tell me about what they are working on. My child that does not receive homework does feel left out.

Save for Fun With Groupon Coupons

Raising four kids is no easy task. I want the best for my kids and I want them to be able to enjoy experiences such as youth sports, lessons and vacations. As you know, my kids are 10, 9 and 8 years old and I help raise my 11 year old niece. These are tough ages. They know what they want and usually it's brand name things. I have raised them to know that you don't always get what you want and they know better than to not buy something on sale. Raising frugal kids is super important to me. They know all about sales, discounts and taking advantage of coupons. 


We take at last two vacations a year as a family. These are big spending money situations for us so we save all year long. We have special savings accounts set up and the kids have to save money too. They each have a "vacation fund" jar that they put money into all year long. They are really into it and sometimes we can get up to $400 a jar!! They are great at adding a percentage of birthday money, all the change they find and when they use coupons to purchase something, I give them the coupon value to add.  For example, they go to the store and want a special brand of cracker and they purchase it with a $0.50 coupon, I give them those $0.50 and they add it to the jar. It really adds up!

One of the biggest ways I save money is using coupons for online purchases, especially coupons from Groupon!  Groupon has coupons to so many popular stores:

The list goes on and on. There really is no reason to not check out Groupon coupons prior to hitting "Submit order" on your online purchases. One of my favorites coupons is for 6pm.com. My kids are constantly outgrowing their shoes and shopping at 6pm.com helps me save a fortune on new, brand-name shoes! Groupon also has local coupons, make sure to check out what's available under your city and state. We save on lots of fun local events this way!

Strawberry & Cocoa Almond Parfaits + Meal Planning Tips

I've set a lot of goals for myself in 2016 and one of those goals was to eat better. I wanted to make the effort to incorporate more fruits and vegetables into my daily meals. I have been doing really well and my trick has been to meal plan. Meal planning helps me get organized and eat way better than I used to before. It's way easier to grab a prepared meal from the fridge than it is to get in my car and go to a drive-thru. One thing I thought I would miss would be a dessert, maybe not even a full dessert like cheesecake, but more like treats. I knew that if I didn't have a treat at least once a week, I would crumble so I decided that I would also include a weekly treat in my meal planning. Something easy and a better-for-you indulgence option like a parfait.


Doesn't that parfait look amazing? I have added this Strawberry and Cocoa Almond parfait into my Friday meals. It's a reward for really working on myself during the week. I got this idea from the new DOVE® Chocolate Fruit & Nut products I found in the store! I used to always snack on DOVE® Dark Chocolate Cherries but I knew these new fruit and nut options would be even better for a parfait!


To add some variety to my recipe, I also purchased DOVE® Dark Chocolate Raspberry & Honey Roasted Almond and DOVE® Dark Chocolate Blueberries! Dark chocolate is my favorite!!

Strawberry & Cocoa Almond Parfait
serves 1

Ingredients:
1 cup DOVE® Dark Chocolate Strawberry & Cocoa Almonds 
(these are actually strawberry flavored cranberries covered in dark chocolate
 with cocoa dusted almonds)
1 cup granola
6 tbsp vanilla yogurt


I used maple pecan granola (pictured below) but you can use any good quality granola that you like. 


If you want an easy treat, it really doesn't get any easier than a parfait. It's just 3 layers of yogurt, DOVE® Chocolate Fruit & Nut and granola. First, you add 2 tbs of vanilla yogurt to your cup, top with DOVE® Chocolate Fruit & Nut and then sprinkle granola on top.


Repeat this same layering sequence twice.


That's it. I mean a delicious treat that's ready in less than 5 minutes? I'm in. So perfect for Fridays!


I make these while I am working on Fridays since I work from home but I also pack it up for JC in a mason jar for him to take to work. Tell me that this doesn't look super amazing!!! I also love that the chocolate fruit are the classic cranberries that DOVE® is known for but with a strawberry flavor that adds some fun!

Meal planning has really worked wonders for us as a family. It has kept us organized, limited our dining out and kept us under budget. I'm not going to lie, it takes work but it's so worth it. Here are 5 tips to successful meal planning:

1. Be realistic. We meal plan for 4 days a week not one day more. We like eating out and sometimes I like to cook up something different so we set 4 days where we eat what we have prepared. 

2. Prepare a meal plan. I take one day during the week (usually while I wait in the dreaded car line) and I prepare a daily meal plan for 4 days. I plan for lunch and dinner and I stick to it. While I am grocery shopping, I only buy what is needed for those meals and various breakfasts.

3. Prepare on Sundays. I prepare 4 days of lunch and dinner for all of us on Sundays. First, I sit and figure out what everyone likes and then I get to work. For example, my family like ground turkey so I will purchase it in bulk (usually like 4 pounds) and make meatballs, turkey picadillo and empanadas. I make food I know they like and just take a few hours on Sundays and make everything. 

4. Eat perishables first. I make fresh fish and salads for earlier in the week. Pastas and rice last longer so those will be for days 3 and 4. 

5. Prepare snacks also. Snacks are the worst for us. If not prepared (fruit washed and cut, gelatin made, parfaits, etc) we will eat junk so I make sure I include those in the weekly planning also. 

My main reason for meal planning is that I hate to see food go to waste. I have loved the saving money aspect but I have also loved not having to throw away food that has gone bad because no one ate it. We've done well since 2016 began, hopefully, we can continue working to eat better as a family!
