Pizza nights are my family's favorite night of the week. Sometimes we order in pizza and sometimes I will make a frozen pizza at home. One thing that is always present on family pizza night is an easy salad. I like for my kids to have veggies at every meal, if possible, so a side salad is the easiest way to get those ever important veggies in! Their favorite salad to have with pizza is a spinach salad!
Did you know that about 15 million Americans are estimated to have food allergies and one in every 13 children is affected? When it comes to foods in our home, I have a food allergy and Adrian experiences some discomfort with certain foods. For our latest pizza night, I wanted to try a gluten-free pizza to see how he would react. While I was grocery shopping at Publix, I picked up a Freschetta® Gluten-free 4 Cheese Medley Pizza. This pizza is covered edge-to-edge with 100% real mozzarella, Asiago, Fontina and Parmesan cheeses. Freshchetta® Gluten Free Pizza is certified by the Celiac Suport Associaiton (formerly the Celiac Sprue Association) so this a crust that all gluten-free eaters can trust.
I love a nice salad, especially with pizza so while I had the pizza cooking in the oven (12-16 minutes at 450 degrees), I began to assemble the salad.
EASY SPINACH SALAD
Serves 3-4
1 pkg baby spinach
1 handful of dried cranberries
3 rounds sliced red onions
1/2 cup diced bacon
4-5 grape tomatoes, sliced
1/2 cup crumbled bleu cheese
2 tbsp red wine vinegar
1 tbsp extra virgin olive oil
Wash and dry spinach. In a bowl, combine all ingredients. Serve!
I told you it was easy! Look at all those colors!!
I had dinner on the table in less than 20 minutes which is perfect for our super busy family!
This little one loved his pizza. He didn't notice that it was gluten-free!
This spinach salad is totally customizable to your family's likes. I've added hard boiled eggs or chicken and had it for lunch also. Amberly takes some in her lunch to school once a week. Try it on your next family pizza night. I promise your family will love it!
Freschetta® Gluten Free pizzas are available in two great flavors and in two convenient sizes, so families can keep the freezer stocked with items to simplify the challenges of following a gluten-free diet!
Tell me about family pizza night in your home. Do you serve salads or any type of veggies with your pizza?
