Grilled Honey Barbeque Chicken

We are officially on summer break!! It's time to head to the beach, relax at home and enjoy this precious time with my kids. We have a lot of staycation fun planned for this summer and staying home means making lots of meals at home. I love to cook but sometimes, I don't want to be in a hot kitchen so I grill outside. Even though it's 90+degrees outside, I do enjoy grilling. My kids loved grilled food, especially when I make Grilled Honey Barbeque Chicken!

Grilled Honey Barbeque Chicken

Ingredients:
Your choice of chicken pieces (drumsticks, thighs, wings, breasts)
salt and pepper to taste
1 tbsp garlic powder
1 tsp paprika
1 tsp ground ginger
1 tbsp olive oil
1 tbsp balsamic vinegar
2 sprigs of fresh rosemary
1 bottle of Honey BBQ sauce

Either the day before or a couple of hours prior to grilling, your chicken must be marinated. In a large bowl, add all your chicken pieces. I am using drumsticks and breasts, since that's what my family likes.Also, I cut the chicken breasts in half so they aren't so thick. 



Add salt and pepper to taste. Then add the garlic, paprika, ginger, olive oil, balsamic vinegar and rosemary. Toss the chicken to make sure all your pieces are marinated, cover bowl and place in refrigerator. 


In our building, we have 2 grills outside. They are a pretty long walk from my apartment so I make sure to pack a bag with everything I will need to grill so I don't have to make a bunch of trips back and forth. I use a reusable store bag and pack the following:

Instant Light Charcoal, Viva®Towels, bug spray, aluminum foil, tongs, a lighter, a brush and barbeque sauce.


Now, we are ready to grill. Since these are public grills and are used often, I clean the grill before I use it. Cleaning a grill is easy, just get an onion, cut it in half and rub it on the grill grates. I learned this from watching cooking shows and it really works!  Then, I add the charcoal to the bottom, light it and wait a few minutes. 


Then, I lay down a piece of aluminum foil and place my bone-in chicken to cook first. The drumsticks take about 45-50 minutes to cook. I cook them on aluminum foil so they don't char. No one likes charred chicken!


After 10 minutes, I turn my chicken pieces and add some corn to the grill. 


After 15 minutes, I brush some honey barbeque sauce onto my drumsticks and turn them again.


Once the drumsticks have been cooking for about 40 minutes, I add my chicken breasts to the grill. These cook way faster so I wait to add them. Grill 5 minutes per side. Brush with the honey barbeque sauce before turning.


I can't have grilled food without grilled veggies so I usually add some of my favorite veggie: asparagus!!!


Asparagus takes about 4 minutes per side to grill. My mouth is salivating just looking at this!! YUM!! Once the breasts and asparagus are done, remove from grill and cover with aluminum foil. No one wants yucky bugs touching their food!


Usually while I am grilling, JC takes the kids to the pool. Once they got back, dinner was ready for my hungry kids. Look at these drumsticks!! Don't they look super delicious?


He loves barbeque chicken drumsticks. Barbeque is super messy so I always wrap the end of the drumstick with a cloth towel to keep the mess at bay!!
