Homemade Rainbow Meringues

Need a yummy fat-free treat for Valentine's Day? How about some homemade meringues? I love meringues, I grew up eating them and just get such a wave of nostalgia when I eat one now. Lately, I have been on a homemade kick and decided that I needed to try and make meringues for the first time. Of course, I couldn't make plain white ones, no need to be so basic. I wanted pretty, pastel colored meringues and they came out pretty great!

These homemade rainbow meringues are the perfect fat-free treat for Valentine's Day or any day!

Homemade Rainbow Meringues
Total time: 2 1/2 hours

Ingredients;
4 egg whites
1 cup granulated sugar
1 tsp vanilla extract

IMPORTANT: Please make sure any bowls used are completely clean of any grease or water. Also, your egg yolks need to be removed very carefully from the egg whites. This is a delicate recipe!

Preheat oven to 250 degrees.

Beat your egg whites in a mixer until soft peaks form. Then add the sugar, one tbsp at a time, until fully incorporated. Continue beating eggs and add the vanilla extract.


To make colored meringues, you need to add food coloring. I wanted pretty pastel colors so I separated the meringue mix into three bowls and added a drop of gel food coloring in blue, purple and pink into each bowl. 


I lightly mixed in the colors, leaving some white streaks.


Transfer colored mix into a piping bag with a fluted tip. Do not overfill your bag. I did this and caused a huge mess! Remember, first timer here.


Cover a baking sheet with parchment paper. Then pipe the meringues. You can make them as big or as small as you want. I love how each one is different! They will look a little flat here but they will puff up a bit in the oven. 


Bake in oven for about 1 hour. Then turn off the heat but leave the meringues in the oven for another hour. Do not open the oven door. They finish baking this way. Then, remove from oven and you will have the lightest dessert, with the chewiest inside, you have ever had. They are so heavenly!


I will be making another batch of these for Valentine's Day treats to tie into my unicorn valentines!
