A Family Favorite: Sweet Potato Pancakes

Today I am going to share with you the recipe for Adrian's favorite pancakes, sweet potato pancakes. He doesn't know they are pancakes with sweet potato in them, he just says "Mommy, can you make me the good pancakes?" Obviously, buttermilk pancakes are not tasty to him. To tell you the truth I agree, these are way yummier! Hope you try them out and like them as much as we do!


Recipe: (Makes about 8-10 pancakes)

3/4 c all purpose flour
1-1/2 tsp baking powder
1/2 tsp salt
1/4 tsp ground nutmeg
1/4 tsp ground cinnamon 
1 egg, beaten
3/4 c milk (we use 2%)
1/2 c mashed sweet potato
Spray oil (for coating the pan/griddle)

Preheat oven to 325 degrees. 

Boil the sweet potato until soft and mushy. Drain then mash and set aside.

Sift together all dry ingredients into a medium-sized bowl. Then add egg, milk and mashed sweet potato. Mix together until combined. Don't stir too much or the pancakes will toughen, just enough to mix all ingredients together. Coat the pan with the spray oil and set over medium heat. Once hot, cook batches until bubbles form on the surface, then turn over and cook until dark golden brown.

Now here's our trick to make these fluffy: Remove pancakes from pan/griddle and place on an ovenproof dish and put in oven. Leave it there while you cook the other batches. Don't leave too long but just while you are cooking. This trick really is the finishing touch.

Serve with warm maple syrup! Enjoy!

  1. Delicious. I never liked sweet potatoes until I had kids and whatever they wouldn't finish, I wouldn't want to waste. Now I love innovative ideas for them. So healthy!
