Who likes sweet potato and black beans together? (Hands high up in the air over here) Well, good because today I am going to share a super simple and delicious meatless recipe with you: Sweet Potato and Black Bean Quesadillas! I love sweet potato but I don't have time to be roasting sweet potatoes when I get home from work so these quesadillas are made with a yummy shortcut, Alexia Sweet Potato Fries!
These quesadillas are perfect for Meatless Mondays, appetizer at a party or just a snack. They are easy to make and only require three ingredients. Yup, just three!
Ingredients: (Makes 6)
1 bag Alexia Sweet Potato Fries with sea salt
1 can black beans, drained
6 flour tortillas
1 cup shredded cheddar cheese (optional)
Preheat oven to 425 degrees.
Open package of sweet potato fries and spread them (in a single layer) out on an ungreased cookie sheet. Place in preheated oven and cook for 20-25 minutes.
Meanwhile, wrap your tortillas in aluminum foil.
As soon as your fries are done, turn off the oven and put the tortillas in the warm oven for about 5 minutes. Open your can of beans, place in bowl and heat in microwave for one minute.
Unwrap tortillas and begin assembling your quesadilla. First, add sweet potato fries to half of the tortilla. Top with about 2 tablespoons of beans and sprinkle on cheese.
Fold over the tortilla to cover all your ingredients and then use the palm of your hand to smush it down. This helps the ingredients blend together a little.
Heat a pan over medium high heat on your stove. Add quesadillas. Cook over medium high heat about 4 minutes.
Flip over. They should be a little golden brown like pictured below. Cook on this side for another four minutes. Remove from pan!
Cut in half and serve warm. Honestly, this will be a completely unexpected combination at first taste but they are extremely delicious. My family devoured them. I think they would be fun as an appetizer or quick after-school snack also!
Alexia products are so versatile and the best part: they are made with all natural ingredients which you can taste at first bite! I love the sweet potato fries but also purchased the Crispy Onion Rings and the New Rosemary Fries. I plan on grilling those later this week!!
