Cuban Style Roast Pork (Lechon Asado)

With President Obama's historic visit to Cuba this week, I have decided to share some Cuban recipes with you this week! Nothing is more Cuban than lechon asado or roast pork. Cubans traditionally have roast pork for all Christmas festivities, Easter and then in regular dinner rotations. I know we have it at least once a month. If you have ever traveled to Miami and had lechon asado, you know how delicious it is. 

Cuban style roast pork or lechon asado. So easy to make and every bite is incredibly delicious! This is the perfect holiday roast

Roast Pork (Cuban Style)
Serves 5-6

Ingredients:
1 3lb Boston butt
6-8 garlic cloves, peeled
1 sour orange
salt and pepper to taste
1 tsp cumin
6 oz dark beer
2 tbsp olive oil
3 cups water

Roast pork is super easy to make. For our family of five, I use a 3lb boston butt portion. I have a little bit of a variance in my cooking to a traditional lechon asado but I promise you it is still amazing!


Rinse your meat with cold water and pat dry. Then, cut 6-8 x shapes in your meat and stuff each x with a garlic clove. 


Meanwhile, heat your olive oil in a large pan over medium to high heat. Once heated, add your boston butt to the oil. It should immediately start searing. Then, add salt and pepper. I add about 1 tbsp of salt to each side. 


Sear for about 5-6 minutes and then turn over. Sear on this side for another 5 minutes. Make sure to season this side with salt, pepper and cumin also.


Once seared, squeeze out all the juice of the sour orange over the meat and then add the beer. Once boiling, add 2 cups of water and cover pan. Lower heat to medium. Once covered, the pork should take about 2 hours to cook


This pork pretty much cooks on its own. I check on it about an hour into cooking, turn the pork, add the last cup of water and then cover again. After two hours, turn off the heat and you will have pork that falls apart at the touch. So juicy and incredibly tasty. 


This is honestly one of my favorite Cuban dishes. I serve this pork with white rice and black beans but you could also have it in sandwiches.

  1. Hmmm...I don't think I've ever had it this way. I always cook a nice sized pork shoulder in the oven. I will definitely put this on the menu for next month!
